How to eat Uuts, a mutton for big events

A part of mutton that includes the lower 3 ribs, back, rump and tail. Cutting from the other parts of meat correctly depends on which side is the head or beginning. Where is the head or beginning of meat parts? The side of animal head is the beginning. When you are offered the head of an animal, first slice a little amount over the nose and put in into the fire. Then you touch and cut a little on the ears and eyelids and you start eating it. The beginning of the neck meat is the part where it joins with head. The beginning of the other parts is their upper part or the part that points down to the ground in the body.
Therefore, you should hold them from those sides and eat. When the whole meat is offered, they are placed as follows: in the front part, the neck, upper part of back, fore legs; at the back part, the hind legs pointed to the front as if the animal is lying. Over these parts the lower part or uuts is put on which the head is placed. The guest should, then, start with the head, followed by the uuts, neck and so on. A knife is given to guests with its handle pointed to them. Therefore, they should also give the other people the knife in the same way. Don’t forget to give some meat to the children in the ger. You are also likely to try Mongolian barbeque and/or hot pot made from sheep or goat meat when traveling in Mongolia.
